It flies off the shelves faster than we can replenish. Obviously, it's made in small batches.

Keep Refrigerated , Do not freeze.
Once opened, keep submerged in water (in fridge) and change water daily.
Use within 3 days after Opening
Very firm, almost like a smoked ham.

Use as mock smoked ham. Works very well in Kung Pao and Mapo Tofu gravy.
